Roaster Drum Fits

I need Some help Baking a large (20-30 lb) fish please?

I had to cut the fish (A Black Drum) in half to get it to fit into a 16" roaster, I'm guessing there's somewhere between 17-25 pounds of fish in the roaster...
This is the first time I've ever tried cooking a fish this size, I would like to know how long to cook and at what temperature, and also what spices to use (besides just thyme)

The thicker the pieces, the longer it will take to cook. In an oven, the heat comes from the outside, so with something thick, the outside can be overdone while the center is underdone. (Think of a steak cooked to "medium" -- it's gray along the outside and red in the center.) This is why bigger fish are generally cut into steaks or fillets no more than about an inch or so thick. It's easy to overcook fish.

But if you're determined to cook it whole, you should cook it like a turkey -- slowly, over low heat. There's no "fish" mark on my oven thermometer, just things like beef, ham, poultry, so I don't know how hot it should be inside to be considered done.

I don't know about spices -- I don't think there's much chance of any flavoring getting a couple inches down into a fish, especially if it's basically whole (that is, the skin is on it).
